Cupcakes are in demand nowadays. No matter whether it is summer or winter season, cupcakes are demanded by people, especially kids. Cupcakes are made in various flavors by using different ingredients. Cupcakes made with dry-fruits are generally liked in winter season and today I will share the recipe of Mini Almond Cupcakes. Hopefully you all will like these delicious cupcakes. They are best for dessert buffets and holidays gifts.
Ingredients
For Cupcakes:
* Almond paste = 2 1/2 ounces
* Egg white = 1 large
* Granulated sugar = 1/3 cup
* Canola oil = 2 tablespoon
* 2 % Reduced-fat milk = 1/4 cup
* Baking powder = 1 teaspoon
* Baking spray with flour
* All-purpose flour = 2/3 cup or 3 ounces
* Salt = 1/4 teaspoon
* Softened butter = 1 tablespoon
* Softened 1/3 less-fat cream cheese = 2 ounces
* Vanilla extract : 1/4 teaspoon
* Powdered sugar : 1 cup
* Dash of salt
Preparation
1. First preheat oven at 350 degree.
2. For making cupcakes, add granulated sugar and almond paste in bowl. Take a mixer and beat them at a medium pace till the mixture becomes sandy (nearly 2 minutes). Put egg white and keep beating for 1 minute. Now add oil and milk and again beat for 1 minute.
3. Spoon flour in dry measuring cup. Then level it by using knife. Add salt (1/4 teaspoon), baking powder, and flour while stirring with whisk. Now add almond mixture to flour mixture; beat them at low pace until combined or for 1 minute. Evenly divide batter between 24 miniature muffin cups that are layered with baking spray. Bake them at 350 degree for 8-10 minutes or when they are baked. Cool them inside pan for 5 minutes while keeping them on wire rack. Now remove them and allow to cool.
